What It Is

High-quality EVOO is rich in oleocanthal, hydroxytyrosol, and oleuropein — polyphenols with powerful anti-inflammatory and antioxidant effects. The PREDIMED trial established olive oil as one of the most evidence-backed dietary interventions for aging.

How It Works

Oleocanthal inhibits COX-1 and COX-2 (similar mechanism to ibuprofen). Hydroxytyrosol activates Nrf2 antioxidant pathways and supports mitochondrial function. The monounsaturated fat base (oleic acid) improves cell membrane fluidity.

Skeptic's Corner

The evidence here is actually quite strong — PREDIMED is a landmark trial. The main caveats are: (1) it's hard to isolate olive oil's effects from the overall Mediterranean diet, and (2) quality matters enormously — cheap 'EVOO' may be adulterated or low in polyphenols.
